Cookies

Better Than Mom’s Peanut Butter Cookies
1 cup crunchy peanut butter 1 cup sugar
1 egg ½ tsp. vanilla

Mix well, drop by teaspoons onto greased cookie sheet. Mark criss-cross with fork. Bake at 350° for 10-12 minutes. Makes about 2 dozen cookies. (This recipe uses no flour)


Toll-House Chocolate Chip Cookies

4 ½ cup flour 2 tsp. baking soda
2 tsp. salt
Sift together and set aside
2 cup SOFT butter (not melted, though)
1 ½ cup sugar 1 ½ cup packed brown sugar
2 tsp. vanilla 1 tsp. water
Beat until creamy, then add:
4 eggs

Beat and then add flour mixture. Then add:

2 -12oz. pkg. chocolate chips (4 cups)

Drop by spoonfuls onto cookie sheet. Bake at 375° for 10-12 minutes.

Makes 7-8 dozen cookies

Aunt Colleen’s Oatmeal-Coconut Cookies
1 ¼ cup sifted flour ½ cup butter, softened
1 tsp. baking powder 1 egg
1 tsp. soda ½ tsp. vanilla
½ tsp. salt 1 cup oatmeal
½ cup sugar 1 cup coconut, flaked or shredded
½ cup brown sugar

Add all ingredients together ( except oatmeal & coconut). Blend together, then fold in oatmeal and coconut. Shape dough into small balls. Place onto greased cookie sheet and bake at 350° for 8-10 minutes. Makes 2-3 dozen cookies.

Snickerdoodles
2 ¾ cup sifted flour 3 tsp. baking powder
½ tsp. salt 1 cup soft butter
1 ½ cups sugar 2 eggs
4 Tblsp. Sugar 4 tsp. cinnamon

Mix and sift flour, baking powder and salt. Set aside. Cream butter, add 1 ½ cups sugar gradually and cream until fluffy. Add beaten eggs and mix. Add sifted dry ingredients gradually and mix. Chill in refrigerator. Mold dough into small balls using 1 Tblsp. Dough for each ball and roll in mixture of cinnamon/sugar. Bake about 2” apart on ungreased baking sheet in 400° oven for 10 minutes. Makes 3-4 dozen cookies

Dana’s Snickerdoodles
1 cup shortening (use part butter) 2 tsp. cream of tartar
1 ½ cup sugar 1 tsp. soda
2 eggs ¼ tsp. salt
2 ¾ cup flour 2 Tblsp. Cinnamon/2 tsp. sugar mixture

Mix together. Mold dough into small balls and roll in cinnamon/sugar mixture. Bake at 400° for 8-10 minutes. Makes 3-4 dozen.

No Bake Cookies- Dana Dorsey
2 cup sugar ½ cup milk
½ cup margarine 3 Tblsp. Cocoa
½ tsp. salt
Bring to a boil, then add-
3 cups quick oats 1 cup coconut
½ cup nuts 1 tsp. vanilla

Cook for a few minutes then drop on wax paper, eat when hard. Makes about 20-25 3” cookies.

Old Fashioned Soft Sugar Cookies
3 ¼ cup sifted flour 1 tsp. soda
½ tsp. salt 1 cup sugar
1 egg 1 tsp. vanilla
½ cup butter ½ cup sour cream

Sift together flour, soda, and salt. Set aside. In large bowl, mix remaining ingredients together and then add dry ingredients. Beat about two minutes. Roll out to ¼” thick on lightly greased or floured board. Cut into desired shapes. Place on buttered cookie sheet. Bake at 400° for 5-10 minutes (until done, but not brown). Makes about 2 ½ dozen cookies.

Bisquick Pudding Cookies
1 cup Bisquick ¼ cup liquid vegetable oil
1 egg
1 pkg. (3-3/4 or 4 1/8 oz.) instant pudding (Pistachio is great!)

Mix together, form into balls. Place on baking sheet. Bake at 350° for 6-8 minutes. Cool – frost, if desired. Makes 16-20 minutes
